Brut Sauvage is an even drier style of sparkling wine. Here the winemaker adheres strictly to traditional sauvage, or “wild” fermentation methods. The low sugar level obtained yields a rather dry bubbly of great purity, pale salmon in color with a delicate but persistent mousse. The aromas of slight truffle with mineral and bready notes.
The finish is structured, flavourful and clean. The bright acidity makes this wine a perfect pairing for oysters, sushi and cream sauces, and drinks beautifully on its own.
